Casserole Spinach Bake:

A Pantoga Family Recipe from January 1991 Shareletter – Submitted by Kai

3 pkg. frozen spinach-drained

1 cup onions

2 tsp. nutmeg

5 cups cream
2 oz. butter
8 oz. mozzarella cheese-grated

1 cup parmesan cheese

salt & pepper to taste

Tomato filling:

3 whole tomatoes
1 cup onions
1 cup tomato sauce

1 cup bread crumbs

1-2 cloves garlic

2 oz. butter

Directions: Sauté onions. Add cream & boil. Add drained spinach, nutmeg, salt & pepper and simmer 3-5 minutes, stirring constantly.

Tomato filling: sauté onions & garlic. Add tomato sauce and simmer 3-4 minutes stirring occasionally. Add tomatoes & bread crumbs & remove from heat. Combine spinach & tomato filling with mozzarella cheese. Place in casserole and sprinkle with parmesan cheese. Dot with butter.  Bake 30 minutes at 350°.
